HEALTHY BLUEBERRY PANCAKES


Now these are GOOD. And not just healthy good, like ACTUALLY FLIPPING DELICIOUS. Even Philip enjoyed some of these and normally he refuses to eat my food because it's 'too healthy'...

And they're soo simple and easy too!

It helps if you have a small pancake/fried egg pan in making them the perfect shape (unfortunately I wasn't at home when I made these so had to make do with a large pan and hence have a range of shapes but delicious shapes at that)!! ENJOY THESE SCRUMMY  HEALTHY PANCAKES!!

This makes about 6 small-medium pancakes

Cooking and preparation time: 15 minutes

You will need:

  • 2 medium eggs
  • 1tbsp yogurt (I used fat free greek style - natural also works)
  • 2 1/2  tbsp flower (wholegrain flower is healthier)
  • 2 tbsp almond milk
  • 1 small teaspoon of honey
  • 1 cup of blueberries
  • Coconut oil for healthier cooking (or butter if you don't have coconut oil)
Steps:
  1. Simply add all of the ingredients expect from the blueberries to a mixing bowl or jug and mix with a whisk or hand blender. 
  2. Add the blueberries to the jug.
  3. Add the coconut oil to the pan and wait for it to get quite hot.
  4. Pour the desired amount of mixture in for the size pancakes you want (small, thick pancakes are better for blueberry pancakes).
  5. Use a spatula to keep checking the underside of the pancake - when it's golden brown use the spatula to flip the pancake over until the other side is the same colour.
  6. Keep adding a little coconut oil for every pancake.
  7. Serve up with a drizzle of honey and enjoy!
