Roasted feta with traffic light tomatoes
This is another recipe taken from A Modern Way to Eat // Anna Jones which I have just adapted and it is soo fabulous and delicious.
It just uses:
A selection of different coloured organic tomatoes
Feta cubes
Spinach
Lemon
Fresh basil
Sea salt
Olive oil
If you have never tried roasted feta before - YOU MUST! It is out of this world. You cut the feta into chunky cubes (to ensure they stay in tact) and place them on baking paper and onto a tray in the oven (the baking paper is essential, otherwise they'll melt all over the tray as the bottom will get too hot). Squeeze a little lemon and a slight drizzle of oil over them. You put them in at 200 degrees Celsius (220 for non fan assisted ovens) for about 20 minutes until they're golden on the outside. Then you add the juice of half a lemon, a tablespoon of olive oil, a pinch of sea salt and a good bunch of fresh basil to your spinach and halved tomatoes. Once the feta is done you just add to the top of your salad and then it'll look something like the pictures here and taste like something incredible!
