HEALTHY VALENTINE'S DAY VEGAN TRUFFLES

So the weekend is looming and that means Valentine's Day! I for one am very excited!!

And what better way to celebrate than with (semi) healthy truffles! And YES, there is such a thing! Plus they're super easy too! And they taste like very guilt-ridden chocolate truffles (but of course they're not) aka SCORE! So let's get to it!

You will need:
  • 1 cup dates
  • 1/2 cup cashew nuts
  • 80ml of water
  • 1/4 cup cocoa powder (raw cocao powder would be even better - unfortunately I couldn't get hold of any - but Waitrose do sell cocao for those of you in the UK)
Steps:
  1. Pour the cashew nuts into a food processor and blitz on high for about 2 minutes until they form a cashew powder. Pour out of the food processor and put aside.
  2. Add the cocoa/cocao powder to the cashew powder and mix.
  3. Add the dates and water to the food processor and blitz on high for about 2 minutes until they form a paste.
  4. Add the cashew and cocoa powder mix to the food processor and mix again for a further minute. Eventually you should end up with one big ball of mixture - a giant truffle!!
  5. Use a teaspoon to spoon out mixture and using the palms of your hands, roll into balls and roll in dusting. I also made some truffles which I rolled in desiccated coconut which is less traditional but I loved (and preferred)!
  6. And enjoy with a glass of champagne or as a cute gift idea, place some tissue paper in a small gift box and put some of your lovely truffles inside!
Happy Valentine's Day for Saturday! Courtney x

THE INCREDIBLE LIMBER STRETCH - MY NEW ESSENTIAL LIFE AND WORKOUT PIECE (AND 20% OFF DISCOUNT CODE)

PRESENTING THE AMAZING LIMBER STRETCH!!!

So at first I was a little skeptical about how I would use this belt and wasn't sure if I'd have much use for it... And how wrong was I!!! In short; I LOVE this belt. It's an absolute essential for me now - both a lifestyle AND workout essential. So I thought I'd give you a detailed review of the product and hopefully you'll think about buying one too!! To be honest, I think it's actually a very sound investment. I will DEFINITELY stick with this belt. I've had my belt for about 5 days and barely taken it off.

Firstly, I don't know how much I can emphasize that this belt is sooooo comfortable. In fact, the other day I just wore it all day and almost completely forgot about it hah! Its Spandex Lycra band just sits effortlessly around your waist or hips. And even when you have your phone and other belongings in the belt, sitting down is just as comfortable.

I was a little worried about the sizing, because I have quite a small figure and an especially small waist. However, the smallest size fits wonderfully on my hips and doesn't loosen when I move. But the great thing is, they offer to replace your band if you do pick the wrong size, so you can't be put off by sizing!

I went for the black band, which is really subtle and looks like part of my yoga pants/running tights and just goes so well. Though I'm actually considering getting one of the aqua coloured ones to show off because that one is such a nice colour and would like nice in the summer hah!

As I've mentioned, I was skeptical about using it for running, but I MUCH preferred it to the usual arm band!!!

I was also expecting the band to keep moving as I ran, and having to readjust it, but not at all - it stayed in place for a whole 5K! And it was SO comfortable. The problem with armbands is they wobble around and loosen and if you wear a jacket, and want to take it off whilst running, you can't without stopping your run, because it's strapped around your arm. I also really preferred having all of my belongings just at my waist so that I don't have to worry about them. It's much more comfortable on your waist and you don't feel the weight of your phone moving at all, like you would with an arm band.

Another feature I love is the little hook inside which I like to put my house key on so that you have no worries at all about it coming loose. However even running with my phone, key and money (as I was stopping off at the shop afterwards) was no problem at all and I didn't feel like anything was going to fall out during the run.

Also, I love to use the Nike+ Running App and having the phone easily accessible on my waist means that I can easily take it out mid-run and check my distance/speed/etc and easily place it back in - something I wasn't able to do with a running arm band. As well as running I also wore it to yoga, and even through extravagant poses it stayed in place and remained really comfortable with my belongings in

This belt is also really ideal for taking my dog for a run because normally I end up running with a handbag with treats and poo bags and my money and phone in (which is a nightmare) but this makes for effortless dog walking/running. Especially in the summer when I won't have jackets and coats with pockets in, I can't wait to wear this!!! I can imagine that it would be perfect for cycling and hiking too in the summer, which I'm looking forward to. I'm also doing some travelling soon with a lot of long flights and moving about and I just know that my travelling attire will be yoga pants and my Limber Stretch band as I'll be able to keep my passport, phone, money and boarding passes right around my waist (especially as I won't have jackets and coats where I'm headed)!! EXCITING TIMES!

So on the whole, I COMPLETELY recommend this product because it's so versatile and comfortable and convenient and I think everyone will have a use for it and some of you will have loads of uses for it like me! There's such a sense of freedom with being completely hands free! Especially during exercise or travel when you're rushing about and really do want to be hands free! I LOVE my Limber Stretch band!!!!! It is WELL worth the money! And the material feels really durable so hopefully it'll last a long time too!

You can order this band from Amazon UK by searching the Limber Stretch or by clicking this link here! AND FOR ONE MONTH I PRESENT YOU THE CODE: LOVEHUGS for a further 10% off of the price which already has 10% off, giving you a 20% saving!

P.S Delivery was super speedy too, I received mine within 3 working days!

Have a beautiful day!!!!! Courtney x

OATMEAL BANANA BOOST COOKIES

These are wondrous, wondrous little beauties. Honestly, they're magical...

They only have a few ingredients, they're packed with goodness, they'll give you energy AND you can have them ready to eat 20 minutes from now! They're nice and crispy on the outside and moist and banana-y on the inside, YUM! With their slow-release energy they make perfect breakfast cookies, or on-the-go snacks for work or hiking etc!

Now I made these today because a) at the moment I have an overwhelming urge to eat cookies/biscuits and thought that if I make a healthy alternative at least it won't be so bad if I fail to keep these cravings at bay and b) I have a lot of bananas left over c) I had run out of healthy snacks and literally only had 20 minutes to spare before I had to leave the house!

For this, I used wholemeal oats with raisins and papaya (you can literally use any kind of healthy oats)!

Cooking and preparation time: 20 minutes total

You will need:
  • 2 medium sized bananas (the softer the better)
  • 1 cup oatmeal
  • 1 tablespoon honey
  • A few coconut flakes (optional)
Steps:
  1. Preheat the oven to 200° C for fan ovens and 220° for conventional.
  2. Use a potato masher to crush the bananas until they're a runny mixture.
  3. Add the cup of oatmeal and tablespoon of honey to the banana and mix well.
  4. Place a sheet of baking paper on a tray and use a tablespoon to spoon the mixture onto the paper and pat down and shape using the spoon.
  5. Place a few little coconut flakes/desiccated coconut on top of the cookies.
  6. Place in the centre of the oven for 15 minutes.
  7. Remove from the oven and leave to cool on a cooling rack.
  8. Drizzle with honey and enjoy as breakfast cookies or as an on-the-go healthy snack!
Have a beautiful day! Courtney x

NANO ENGRAVED JEWELRY

I just wanted to share with you this truly beautiful masterpiece! This was a Christmas gift from Philip so unfortunately I don't know where it's from, but I just had to share this with you guys! It's a gold frame with black onyx and nano engraved with gold. It's a Buddhist necklace and came with a little magnifying glass to read the engraving. It reads:

Metta Meditation
May I be filled with loving kindness
May I be well
May I be peaceful and at ease
May I be happy

May all beings be filled with loving kindness
May all beings be well
May all beings be peaceful and at ease
May all beings be happy

Have a beautiful day

WINTER TIME UPDATE

So it's still winter time. And it seems to be getting more and more wintery. Now I wouldn't mind if we at least had some snow. But nope, just cold, dark days still...

Which is irritating because I really want to run outdoors, but it's too cold and icy or the routes are covered in swamp-like mud. Which is a shame because running on a treadmill just isn't the same...

I need to invest in some Winter running gear. Yup.

We occasionally get a sunny winter's day though, and those are quite pretty. So I thought I'd share these pretty, un-edited winter pictures with you.

AND in other, more exciting news, me and Philip have booked our flights to Singapore for 30th April to 18th May!!!! SO exciting!! Although I'm not quite prepared for running in 32 degrees Celsius with insane humidity! BUT I CAN'T WAIT!

Also, I'm thinking of doing a giveaway soon featuring a lot of the products I've done posts about, so that you can enjoy my favourites too! What do you think?

OUR TRIP TO BERLIN!

SO this is a little late, but I thought I'd share with you what was a wonderful trip to Berlin that me and Philip went on in December, as I'm adding a new 'travel' section!

So in the Christmassy spirit we thought we'd take a trip to the heart of Christmas markets, BERLIN! (Not only was it the heart of markets, The Mall of Berlin was the most incredible place EVER and they had a food court with about 50 independent foreign cuisines and it was amazing! I had the most amazing vegetarian Thai food which is shown to the right here (mmmmm!!).

Unfortunately, as a non meat eater, I couldn't really eat any typical German food which is mostly sausages of some kind.

We did a lot of the historical/touristy stuff like TV Tower, Checkpoint Charlie and the museum, went into the Reichstag, the Jewish War Memorial, walked the Berlin Wall, visited Brandenburg Gates, saw Hitler's Bunker, the Berlinerdom and did lots and lots of Christmas market shopping, eating and drinking!

MY 'BODY SHOP' COLLECTION

So I LOVE Body Shop! Their stuff is natural and fairtrade, eco-friendly, sensitive and soo good for your skin! And it all smells super good!  I love that I can use all of their products without worrying about how my skin will react to it!I know a lot of people also like Lush, but I've never been a fan of Lush products, I find them all too perfumey for some reason?? But I love the range at Body Shop! So I just thought I'd share with you my current collection (which is actually fairly small at the moment as I've finished a lot of products completely).

This collection is made up of:
A strawberry shower gel
A strawberry body polish
Two strawberry soaps
Two strawberry body butters
A body scrunchy
A 'ginger sparkle' hand lotion
A shea butter body butter
Vitamin E cleanser cream
Vitamin E eye cream
Honey hand cream
Peppermint foot cream
Coconut body lotion
Aloe vera soothing face cream
Rainforest naturals hair conditioner
Tea tree cleanser
'Fudge' lip balm

The tea tree cleanser is one of my favourites! In fact, their whole tea tree collection is really good! You should give it a try! Especially if you're trying to get clearer skin (but don't forget to moisturise a couple of times a day if you use tea tree products)!

One thing I haven't tried much of is the Body Shop makeup - have any of you?? Let me know!

ANOTHER HOLLAND AND BARRETT TRIP

So I took yet another trip to Holland and Barrett yesterday to buy some wonderful new things. And got some great deals too as the penny sale is on!

As per usual I bought lots of new teas to try and my tea collection is now really quite absurd! I have a full caddy of tea in my tea box and 7 other boxes! But tea is wonderful so who cares (I'm just running out of room to store it all)!

I also got some yummy goodies...

Up until now I had not tried agave nectar as I love to sweeten things with honey and have always been quite content with that, but I thought I need to give it a try. It'll be better for things like baking where I don't necessarily want the honey flavour but need to sweeten it. I also bought some Yo Yos (which I call Yo Yo Bears - not sure if the bear part is included in the name??) but they're just yummy junk-free fruity goodness so you can't go wrong there!

I also thought I'd try one of the Dr.Organic lip balms as Holland and Barrett seem to love this brand and this lipbalm smells and feels amazing on my lips!

I also bought some vitamins but I'm going to do a separate post about vitamins and supplements shortly so 'stay tuned' for that!

MORNING BOOST GREEN SMOOTHIE!

Mmmm, a delicious green smoothie for that morning boost is just unbeatable! I made this small serves 1 smoothie with:

A large thick handful of spinach
1 small banana
About 5 medium sized strawberries
About 50ml of water
A teaspoon of chia seeds

So, sooooooo nutritious and healthy and really delicious too!! There's is NOTHING bad about this smoothie! None of the fruits are sugary or acidic so there are NO drawbacks! Horrah! The spinach is packed with iron, vitamin A, K, C, B2 and folic acid and also contains manganese and magnesium. So that will give you a good morning boost! Plus we all know that bananas are GREAT at setting you up for the day and releasing their energy slowly and strawberries are sooo yummy. And of course the superfood chia which is just JAM PACKED with nutritional value! So make sure you make one of these super quick and easy, tasty green breakfast smoothies soon!!!

I also prepared lots of fruit today for the next few days (and you can see another banana and berry smoothie sneaking in the background there too). Enjoy these pictures of all of my yummy fruit!

NEW NIKE RUNNING GEAR // DOWNSHIFTERS 6

Up until now I have absolutely loved my Nike Revolution 2 running shoes, but truth be told they have seen better days. They're by no means wrecked... I just thought a sparkly new pair would be nice. And it was between another pair of Nike Revolution 2 or trying the Downshifters. The Downshifters looked even more 'bouncy' and supportive and were only a little more expensive, so I went those!

And of course I had to (did I really? Really?) get some new Nike socks to go with them!

(I'm going to wear them out soon and will get back to you)!

Which shoes do you wear for running/working out? Any Recommendations?

UPDATE 10/01/2015 17:30
Okay, I've just got back from my workout and on land and treadmill these are AMAZING! Running is just so effortless. I am in love.

ETHNIC FAIR-TRADE HAUL // BEAUTIFUL LITTLE TREASURES

I've been so excited to show you guys all of these wonderful things from an amazing shop, Evolution, which I visited in town yesterday, but they also trade online too!

The company works with fair trade workers around the world in countries such as Thailand and India to produce beautiful ethnic products that we can enjoy at home whilst encouraging fairer conditions and pay abroad for wonderfully handmade, sweatshop-free treasures! So here are the things I bought!

A lovely little Aztec style rug, some handy cute little jars, a really great Day of the Dead pen (I'm a big Day of the Dead fan)*.

A really cute little bag for the summer which was handmade in Thailand, a large vanilla candle set with a little mat and incense set, some vanilla tealights, another normal vanilla candle and some Nag Champa incense sticks (which I've heard are way better than normal ones)!

I also got a really lovely pack of coasters and yet another vanilla candle set (I like vanilla).

Some of these things I've put aside to fetch out in a year or two when I have a new house (and actually have room for all of the beautiful things I buy).

Hope you enjoyed these pictures! And definitely checkout their website!!

* Day of the Dead: I've been to Mexico 5 times and watched some documentaries on Day of the Dead and it's just so wonderful and colourful. Celebrating the lives of those who've passed is a wonderful thing!

NAKD BAKEWELL TART BARS - SOO GOOD

So you may already know from this post and this one that I'm a HUGE Nakd fan, like a SUPER DUPER Nakd fan...

AND THEN ALONG CAME THE BAKEWELL TART FLAVOUR AND THAT HAS TAKEN MY FANDOM TO AN ALL NEW LEVEL.

But seriously, these are incredible - a dream. They're the tastiest things ever (they actually do taste like a bakewell tart just minus the junk)! And they're sooooo good for you! All they contain is: dates, cashews, raisins and a natural flavouring. HUH? REALLY? Yes really. Sooooo healthy.

If you haven't tried Nakd bars before a) you are really missing out b) checkout the links at the top where I talk alllllll about why Nakd bars are so great and c) BUY SOME.

What's better, you don't have to break the bank for these - at Tesco (sorry USA readers :( ) at the moment they're 50p!!!! Which is the same as a chocolate bar?? And that's cheaper than you'll find them anywhere else I believe. SO STOCK UP! I bought 10 to start with to add to my collection which is quickly depleting...

Here's my collection muahaha!!

New Year's Resolution Gym Goers...

So I thought it was about time someone stuck up for the 'New Year's Resolution Gym Goers'! Because I keep seeing posts about how 'annoying' they are! Huff!

Personally, I haven't even noticed an influx of newcomers since the New Year, but some of you seem to be moaning about them anyway! (Come to think of it that's probably because my gym has a 6/12 month contract).

SO here's what I think... Anyone who truly is a health enthusiast would be thrilled to hear that so many people have decided to turn around their lifestyle and get fit and healthy!

Obviously nobody likes a busy gym... But at the end of the day, they pay their membership fees just like you and have every right to use the equipment!

Besides, like every year, the percentage of people that stick at it probably won't be very high, but for those that do - congratulations!

So good on you, New Year's Resolutioners!

MY NEW SMOOTHIE BLENDER!

This is the Breville Blend Active and I LOVE it!

I bought my friend one of these for Christmas and then I just couldn't resist getting myself one!!

It's so small and slick and fits anywhere really neatly. The 'blend in bottle' feature means that it makes no mess! All you do is remove the blade and place the bottle top on. If you wash the blade under hot water after blending, for about 20 seconds, it's clean straight away!

And it's actually really good at blending!! I put in frozen chunks of mango which are SOLID but it blends them effortlessly - and ice! So it's sooo good!

It's quite cheap too - in fact it's on offer for £24 on Amazon at the moment with free delivery so you just must get one!

Make sure to leave your comments below! How do you make your smoothies?

10 WAYS TO BEAT LATE NIGHT CRAVINGS!

So night time cravings are just one of those things... You're bored or watching TV and the only thing you really want is to tuck into a tube of pringles - right? BUT you know that as soon as you've finished those pringles you'll be angry that it's only Wednesday and you've already blown your new diet already (so you'll probably finish off with some ice cream to cheer yourself up because the damage is already done)! Sound familiar?

Yeah we've all had those nights...

Nowadays I'm pretty good at overcoming late night hunger though, so here are some ways that I combat it, and I hope you find these usefull too!

The thing is, eating late at night can set you back days in achieving your weight loss goals (if you are trying to lose weight) and is just generally a bad thing in a healthy lifestyle because your body has no time to use the energy from what you eat and is already slowing down ready to sleep, so most of what you consume will just get stored and unfortunately you can't 'just burn it off tomorrow'.

  1. Herbal tea
Herbal tea, preferably camomile, green roobios, fennel or a green tea with a little honey can often do the trick. I find that, especially with a teaspoon of honey, a nice herbal tea (which often actually speeds up your metabolism) is tasty enough to satisfy your taste buds, especially if you crave something sweet. Often as well, we think we're hungry when actually we just need water, so a mug of, essentially, infused water is perfect. Besides, herbal teas will help to calm you down and will perhaps stop this agitated desire to eat a bag of sweets!

   2. Super light crunchy deliciousness

Cucumber and homemade hoisin sauce is a great one. Often, when tea or water just won't cut it, something crunchy will be able to satisfy your body's cravings. And this snack is delicious - even more so if it's a Chinese takeaway that you're craving at 11:30pm! The sauce is pretty low calorie, and the calories aren't really from fat or carbs, so there no risk of your body storing your snack! And cucumber has so few calories that they're not worth counting! (There's a recipe for hoisin sauce here and a delicious dish that goes with it).

   3. Mini frozen smoothies

Mini frozen smoothie pops (homemade and not full of sugary junk of course) are great because they last a while and will make you feel more full after than e.g a cereal bar (which if you're like me disappears in seconds). Make sure to use water instead of orange juice in your smoothies and avoid the sugariest fruits.

   4. Don't mope

Moping around and doing nothing with your evening will surely lead you walking to the fridge in search of 30 seconds of comfort from a chocolate bar! Be productive with your evenings; do some reading, watch a documentary, find some new hobbies like painting, etc! But whatever you do, don't mope!

   5. Try to include protein and fiber in your dinner

It's shown that protein and fiber will help you to stay fuller for longer, so although veggies are great, include some protein and fiber otherwise you'll be hungry again within half an hour! Beans and healthy grains are a great way to bulk up your dinner and pack in lots of nutrients too!

   6. Go to sleep earlier

Going to sleep earlier sounds silly, but if you're used to staying up until 2am then you're bound to get hungry if you had dinner at 5pm and have now gone 7 hours without any food! Humans are naturally grazers, and going 7 hours without food is unhealthy. So get to sleep earlier. Besides, there's nothing wrong with a snack at e.g 7pm, you just want to avoid anything past about 8pm, based on a bedtime between 10-12, anything later and you're just going too long without food.

   7. Have a bath

I've titled this 'have a bath', but do anything relaxing and tranquil really. A lot of us want to eat junk food out of stress and agitation and our hunger can often be cured by just winding down in the bath, with a good book or going for a walk. But not watching TV or playing on your phone - no electricals! Which brings me on to my next point...

   8. Put down the electricals

Spending all night on your iPad or phone is no good for your brain or your sleeping patters. The back-lit screens tell your brain that you should still be awake, so your body doesn't release (or releases less of) the hormones that are released at the end of the day to prepare you for sleep and making you feel tired - and certainly not feel hungry. So if you want to beat night time hunger, you can't watch Netflix until 1am.

   9. Do a mini workout/yoga

Doing a mini workout - perhaps just 15-20 minutes of stretches and exercises, or a short yoga routine will release endorphins, help you to feel more relaxed and make you feel a little more tired and ready for bed. Besides, after doing a workout, we're a lot less inclined to eat a chocolate bar as we feel like we wasted our time doing a workout.

   10. Structure your whole day

So what this all boils down to and the recurring theme here appears to be that late night hunger is a symptom of an imbalanced lifestyle. If you eat breakfast, a few healthy snacks, a good healthy lunch and dinner with plenty of protein and fiber and do some exercise before settling down to a good, productive and relaxing evening, the chances are you won't even feel this hunger and need to fight it! So think about reshaping your day! With more structure and earlier nights and there's sure to be a change!

Here's a challenge -

Set yourself the challenge to have NO night time binges for 21 days. Write out a list, and make it as pretty and fancy or as straight forward as you like, and write out

Day 1
Day 2
Day 3...

And tick off each day as you successfully do it! If you cave in, you have to start again from day 1. Once you've made it 21 days it should be habit (and providing you're eating enough during the day) you should no longer feel cravings for junk food late at night!

Here are some BAD suggestions that I came across on the internet, some 'quick fix solutions'...

1. Eat dinner later
Um, no?! That completely defeats the point of trying NOT to eat late at night. Really, our biggest meal should be breakfast as the first meal of the day, then lunch, then a very small meal for dinner as there's little time to burn it off. Eating dinner later is a BAD move. If you're trying to move your health in the right direction, make dinner EARLIER and have a smaller portion and compensate with a bigger lunch!
2. Chew gum
Chewing gum on an empty stomach is bad for you. Your body thinks you're eating and your stomach produces acid to break down the 'food', which results in excess acid in the stomach which isn't being used up breaking down food. So instead it damages the lining of your stomach and can result in stomach ulcers (very bad news indeed). Besides, chewing gum can make you feel bloated or more hungry than before anyway.

3. 'Drink LOADS of water!'
Let's be honest, the taste of water isn't going to curb your cravings for something sweet or savoury. In fact it'll probably just make you feel bloated and ill (and still wanting something sweet). What you should do instead is stay hydrated during the day and make sure to drink water with meals, especially dinner in this case, so that they fill you up more.

But lastly, don't beat yourself up about it guys! We all have those days where we think 'I've had a bad day and I just don't care - I WILL devour a pack of cookies tonight whilst I watch Bridget Jones'. And that's fine! As long as you're not eating giant carby pasta bakes or fat filled burgers at midnight every night... But once in a while, don't worry about it! :)

And here's another idea - don't keep junk food in the house then you can't eat it! Or at least perhaps just some dark chocolate. But this isn't possible for me, and probably many of you, who live with others who keep all of the tempting junk food in the house!

Thanks for reading guys! Please comment and let me know what you think/ what you do at night - I'd love to hear your feedback! And share this post to help others with their late night cravings!

My New Year's Resolutions Explained!

(Just a picture of a tree I took last sunny Sunday on the way to London)

So it's that time of year again - New Year's Resolutions. It's a clean slate, a great opportunity to take on new challenges and it's the time of year that we all (not just the avid, daily goal-setters) take to setting goals and rules and new little tips to live our lives by in 2015...

Now, I wasn't going to write a post on this, as I'm quite unsure where this year will take me. But I thought that perhaps if I try and get things down on paper (or a page somewhere within the internet) then I might be clearer myself.

However... Firstly, I'd like to say that some of these aren't necessarily things that I've decided that I must start now and do every single day until the end of the year, but more where I'd like to be somewhere down the line of 2015. Part of setting goals I think, is being realistic and at least making these goals achievable within modern busy lives. There are two types of goals really; things we pledge to do, and things we pledge not to do. And as a rule of thumb, the things we pledge not to do, we should be stricter on, because these should in theory be easier. This is because obviously the things that we decide to do, there's always the problem of finding the time to do it. So that's why some of my New Year's Resolutions are slightly different.

1) Get to sleep earlier

Now this is one of those difficult ones, where I'd love to set myself a bed time of e.g 11pm, but that's simply unrealistic (especially considering I don't finish work until 00:00 on one night of the week). But, it's also one where I feel like I need structure or clear aim. So I've decided to set myself a 'bed time' of 11:45 (most of the time) which doesn't include reading time. I think that's more achievable. I know that this is something that I need to do in 2015, so that I can wake up early and make the most of the days. I hate sleeping in! I absolutely detest it, and it almost ruins my day where I'm so annoyed that I've wasted a great deal of it. Besides, everything is better after a good night's sleep. As well as this, in the summer, when the sun rises very early, unfortunately I naturally awake with it, meaning that if I sleep at 2am (which isn't unusual at the moment) I'll end up with only a few hours sleep which just isn't good enough!

2) Read. Every single day.

I love reading and recently I've read some really wonderfully posts which I mentioned in a post a few days ago. But when life get busy and I'm short of time, and don't get home and into bed until 1/2am, the tendency is to skip the reading. Which really is silly, because reading a chapter from an inspiring book for half an hour always helps me to have a much better quality night's sleep, free of REM sleep, in which case I probably wake up better rested, despite having 30 minutes less. So this is something I need to make time for. I'm a firm believer in this little motto that 'if you don't have time, make time'. Whether it's getting up 30 minutes earlier, spending 30 minutes less 'doodling' or killing two birds with one stone and for example reading on the train or over breakfast. When I'm in a good pattern of sleeping at a reasonable time and waking up early, I'll read over my coffee in the morning, sometimes for half an hour spare during the day, and then for about half an hour before bed, with a cup of camomile tea. But I wish to get to a place where I do this every single day without being 'too busy'.

3) Meditate and/or practice yoga every day

This one is very similar to that above. Taking the time to be in the present moment and be at peace, is worth every minute that you spend doing it and the benefits are simply indisputable. As Robin Sharma wrote in The Monk Who Sold His Ferrari, saying that you're too busy to spend time improving yourself and your life, is as silly as saying 'you're too busy driving to stop and get gas'.

4) Food - Fight the impulse to finish everything on my plate, avoid refined sugars and no sweets whatsoever

This sounds like a bit of a silly one... But a lot of the time, I find myself trying really hard to finish what's on my plate, in somewhat of an obsessive compulsive way, when I don't want to finish it and certainly am not enjoying doing so. And I suppose what I mean by this, is I should 'listen to my body'. If I've had enough of a nice meal, I should stop. But similarly, if I'm really, really hungry one day, I should eat (healthy snacks at that) but I shouldn't feel compelled to 'wait until lunch' and so forth. I want to avoid refined sugars in things where I can as they're not at all needed in our diets, and only act as toxins which damage my teeth and hair, etc. So it goes without saying that I certainly shouldn't eat sweets, considering they're made up of mostly sugar, plus other completely unnatural nasties!

5) NO alcohol

Last, but certainly not least... The question of alcohol. This is one that I'm really stuck on (and would really love your opinions)! I would love to be completely t-total, I feel like it would be totally liberating to be able to say 'no thank you, I don't drink'. It would be wonderful to go to a party, or a night out and know that I can have a really great time without the need for any alcohol. And I could completely rid myself of the horrible hangovers, the negative health effects and everything else that comes with alcohol consumption. And as part of becoming Buddhist - and not seeking pleasure from external things, never mind the likes of drugs, alcohol, money, etc - it would be a big step in my self-discipline and in being more mindful. But then I think, a glass of wine with a meal is not only not bad for you, but can have positive health effects, so is it extreme and unnecessary to be completely t-total? At the moment, I've decided to do it, because in being completely t-total there's no room for loop holes and saying 'a few glasses is fine', etc. I'm just slightly undecided about whether or not being completely t-total is necessary.

P.S And please don't get the wrong idea - I rarely drink anyway, perhaps about 2-3 times a month!

Thank you for reading my New Year's Resolutions! And Happy New Year! I'd love to here what yours are, so leave them in the comments below, or leave a link if you've written your own post! Courtney :)

My first meal from 'A Modern Way to Eat' // Anna Jones

This 'Seeded bread and roast tomato soup' is absolutely delicious yet so simple!

First you roast about 3 medium, vine tomatoes with a chopped garlic clove, some fresh basil, sea salt and a drizzle of olive oil for 20 minutes at 200 degrees Celsius, and then on the stove you add some more basil, a little more salt and a 400g tin of good quality organic plum tomatoes and some water which will evaporate off after a while. You mix this together and then simmer for about 20 minutes to allow all of the flavours to come out. And then that's it! You just add pieces of seeded bread, a little more basil and a drizzle of olive oil over the top and then that's it, it's ready to enjoy. It takes a little while to prepare and cook in total, but it's so worth it for the flavour you get at the end. And this made two dinner portions.

This is the first recipe I have tried from the book and I really can't wait to try the others. This vegetarian recipe book is incredible and I've written a separate post about it which you can read by clicking here (and I recommend you do - it's so wonderful)!!

New reads // for positive thinking, happiness and mindfulness

Hello peoples! These are some of the wonderful new books I received for Christmas that I absolutely cannot wait to read, having just finished some other similar and wonderful books!

  • The Miracle of Mindfullness, The Classic Guide to Meditation by the World's Most Revered Master // Thich Nhat Hanh
  • How to Practice the Way to a Meaningful Life // HH Dalai Lama*
  • The Art of Thinkng Clearly // Rolf Dobelli
  • Discover Your Destiny with the Monk Who Sold His Ferrari // Robin Sharma
I have recently finished the two of the Monk Who Sold His Ferrari books by Robin Sharma, including the first (The Monk Who Sold His Ferrari) and the second, The Secret Letters of the Monk Who Sold His Ferrari) which were absolutely fabulous and I kind of feel as though I should write a separate post about them... I also read the famous Alchemist by Brazillian author Paulo Coelho which was so fabulous and unique!

The Monk Who Sold His Ferrari tells the tale of a hot shot lawyer who was making a fortune and spending his earnings on his expensive party life style when he made it out of the office late at night, much to the detriment of his relationships, health and inner happiness. Consequently, during a stressful court case, the lawyer, Julian Mantle suffered a heart attack in the middle of the court room and had the realisation that he was running himself and his life into the ground. Following this he embarks on a journey and upon his return visits a friend of his from his law days to share everything he has discovered and how he made a miraculous turn around of his life from what it was before. The entire book is based around this discussion with his friend and is totally gripping. The most wonderful thing about this book, is that it doesn't merely say 'mind over matter' like many books of this kind but it gives you ways, in every chapter, of turning your own life around, or simply making the most of life and everything it has to offer. It realises that people have busy lives and cannot dedicate 12 hours a day to self-improvement, so it gives you ways around that.

The Secret Letters of the Monk Who Sold His Ferrari is similar but equally as captivating having read the first. In fact, I think I even preferred this one. In this novel, the book actually documents the travels of Jonathan Landry, a lost relative of Julian Mantle who is going through a similar crisis within his own life being stuck in a job he dislikes which causes him great stress and having ruined his marriage and put a strain on his relationship with his son. Much to his initial distress, Jonathan is sent around the world by Julian, collecting life-saving letters for a reason that he does not know. Throughout the book, you see Jonathan meet extraordinary and inspiring people and see and experience wonderful things - you see his character grow and develop on the journey and eventually discover if he can turn his life around. It's a heart warming story that leaves you inspired.

Now, neither of these books are particularly profound, and I do not claim they will change your life, but they are heart warming and inspiring and will hopefully give you your daily dose of inspiration to pursue a happy life.

The Alchemist by Paulo Coelho is incredible! It almost feels silly to review this book, as there must be tens of thousands of reviews out there. The book is so unique that it's impossible describe without just urging you to read it yourself. Similarly to the above mentioned, The Alchemist is a fable, following the journey of a young man on his attempt to follow his destiny and how the the universe as one, described in this book as 'the soul of the world', works and conspires to help those seeking their destiny. It shows how the boy comes to understand the soul of the world, and his place within it. One of my favourite quotes from the book (though there are many) is 'the boy remembered... that the darkest hour of the night came just before the dawn' as the young man found the strength to continue through tough times knowing that he will eventually find what he needs. I cannot recommend this book enough. It is so unique and wonderful that no review will ever do justice the magic encapsulated within this masterpiece. If you read one book this year - make it this one.

* I have begun with this book as after reading several stories, I'm after some simple teachings from none other than HH Dalai Lama himself.

A Modern Way to Eat // Anna Jones

Hello lovely people! I've decided to be a bit simpler with my blogging as it'll be easier to keep it up alongside my currently very busy life!! SO, I will post what I want, when I want, and worry less about structure, etc - less is more, right?

So anyway... In this post is about A Modern Way to Eat by Anna Jones, a gift I received from my partner's dad and it's truly wonderful.

It's a vegetarian book which is fabulous because I've struggled to find good, big vegetarian books that aren't the kind of cheap cook books you find in pound stores. This one is very different. Anna Jones has worked closely with Jamie Oliver and I love his rustic style of cooking whilst keeping appearance at the heart of the dish, and his recommendation of the book is featured on the front cover so it must be perfect for me.

What's slightly different about Anna's cook book is obviously that it's vegetarian, but also that her cooking tries to stick to wholefoods, considers the effect on the planet and also tries to fit in with modern, busy lives.

One great thing about this book, is that it doesn't just give you a recipe and tell you to follow it to the letter, but it shows you how to combine flavours and colours and textures to perfect your own unique dishes. How to use seasonal vegetables, which herbs suit which flavours, which cooking oils to use, etc, etc.

So it's really quite wonderful! It's full of incredible, colourful, foreign and adventurous dishes AND shows you how to create your own using the ingredients and herbs and flavours that you love!

I would totally recommend!

Thank you for reading my post!

Nakd Celebration Box!

Ok, I just absolutely have to share this with you! This is the Nakd Celebration box which can be purchased directly from the Natural Balance Foods (the owners of Nakd and Trek) which cuts out the middle man and saves on price.

This box is only £13.99 for 18 assorted bars/snack packs and Natural Balance Foods even threw in two bars for free, so I got 20 bars for £13.99. (I fibbed - actually, my lovely partner bought me this box as a surprise treat after I had been lusting after it). And sometimes, even better than this, the box is on offer for just £10. It's amazing! If you're just getting into Nakd bars, then buy this box (which will save you money on the £0.75-£1 store price of these bars) and will let you trial loads of different flavours to find out which one you love! After trying some of these new flavours, I have added the 'caffe mocha' flavour to my list of favourites. It's so delicious! I love anything coffee flavoured (especially coffee chocolates) and this is thee most perfect alternative.

I've also discovered that the chocolatey bars (caffe mocha, cocoa orange and cocoa delight) and absolutely amazing warmed up. If you pop them in the microwave for 10-15 seconds then they taste like little fudgey brownies, they're heavenly and so, so nutritious!
There are three different types of Nakd bar, they have the normal variety which is a mixture of different flavours like 'cashew cookie' and 'rhubarb and custard' and they also have a variety of bars which are oaty bars. The oaty bars are the ones with the light cream background - in the photo above you can see 'apple pie', 'banana bread' and 'berry cheeky'. You can also get the crunch variety, which contain small soya crunchies to make the bars more interesting. So, depending on your preferences and what kind of bars you like, there's lots of variety. As well as this, you can get the little bags of infused raisins - so far I've tried the cola ones and they actually taste like cola! They're wonderful little healthy treats.

If you haven't tried Nakd bars before and want to know what they're all about, then check out a post I wrote a while ago, when I first got into Nakd bars, by clicking here.
